Tis the season for hot tea lattes, cool nights by the fire, dishes sprinkeled with cinnamon, puppy cuddles, warm and nourishing meals, pumpkin carving, and quality time with loved ones! Yay for Fall!

This is one of my FAVORITE sweet treats to make during the fall season! 

It's great for breakfast (or dessert!) and perfect to serve at holiday gatherings!

When I think of the months October and November, I think pumpkin! Right?! I love getting festive in the kitchen by incorporating seasonal vegetables and fruits into my meals; so of course as soon as October rolled around I had to grab all of the pumpkin goods at the store!! 

My Vegan Pumpkin parfait is quite fancy looking, but made without any fuss! :) This Vegan Pumpkin Parfait is made with only 5 ingredients, and a single serving can be made in under 5 minutes! Pumpkin is so vibrant in color, and  with each ingredient varying in color and texture, this dish plates beautifully.

​Aside from this Vegan Pumpkin Parfait tasting and looking amazing; it's loaded with amazing health boosting nutrients! 

Pumpkin is seriously a SUPER-FOOD!! Pumpkin is a highly nutrient-dense food; it is rich in vitamins and minerals, high in fiber, but low in calories! Pumpkin is also one of the best-known sources of beta-carotene. Beta-carotene is a powerful antioxidant, that once ingested, the body converts to vitamin A. Consuming foods rich in beta-carotene may reduce the risk of developing certain types of cancer, offer protection against asthma and heart disease, and aids in the delay of agin and body degeneration. In case you didn't know, vitamin A is good for more than just your eyes; vitamin A plays a vital role in bone growth, reproduction AND immune system health. It also helps the skin and mucous membranes repel bacteria and viruses more effectively!

Pumpkin seeds themselves pack 12g of protein per cup, and are rich in antioxidants, iron, zinc, magnesium and many other nutrients! Aside from this dish, I also love throwing in a few tablespoons of raw pumpkin seeds into my smoothies for an extra boost!

Ingredients

  • 1 cup unsweetened pumpkin (I bought organic unsweetened pumpkin puree from my local market!)
  • 1 cup vanilla bean non-dairy vegan yogurt (I used cashew milk yogurt but almond milk yogurt would be good too!)
  • 1 cup pumpkin granola 
  • 3 TBSP raw pumpkin seeds
  • Dash of cinnamon (top of your parfait with cinnamon to your liking!)

 


 

Layer all of your ingredients in any order you prefer, or mix them all up, either way it'll taste great! This dish is best if enjoyed immediatly after making, however, a few hours in the fridge won't make a huge difference, so feel free to make this ahead of time and take it with you to work or school! (yay meal prep!)
