Weekend Breakfast Recipe You Need To Try

Black Bean, Sweet Potato & Corn Hash
Serves: 2
Ingredients:

2 teaspoons (10ml) oil

2 medium onions, chopped
-
1 sweet potato, peeled and diced
-
2 garlic cloves
-
1 jalapeno, minced and seeds removed
-
3 teaspoons (15g) ground cumin
-
¾ cup (190ml) water
-
¾ cup (130g) corn kernels
-
1 can black beans, drained and rinsed
-
1 lime, cut into wedges
-
fresh coriander, to serve
Method:

Heat the oil in a non-stick fry pan over medium heat. Add the onion and cook for 5 minutes or until soft and translucent, stirring occasionally.

Add the sweet potato and cook for 8-10 minutes or until it starts to colour, stirring occasionally.

Stir in the garlic, jalapeno, cumin and water. Simmer until the water is absorbed, stirring occasionally.

Add the corn and black beans and cook for 4-5 minutes or until heated through, stirring occasionally.

To serve, place the hash on a serving plate and top with some fresh coriander. Serve with lime wedges on the side.
For a bit of extra colour, try adding some mashed avocado. It’s the perfect balance to the spices in this dish!
