Easy Banana Pecan Overnight Oats Recipe

Ready to switch up your breakfast? Healthy breakfasts can be inviting — all you need is a great flavour combination.

This recipe for Banana Pecan Overnight Oats has a classic flavour pairing, and the oats are a great source of fibre, so they’re a healthy and delicious option. They’re quick and easy to make, as the liquid soaks into the oats overnight — you can make the oats the evening before and your breakfast will be ready for you in the morning.

These overnight oats will keep for up to five days in the fridge if they are stored in an airtight container, so you can prepare a few serves ahead of time if you like to plan your meals or meal prep.

Preparation time: 5 minutes
Chilling time: Overnight (minimum of 3 hours)
Servings: 2

Ingredients:

120g (4 oz) rolled oats

260ml (9 fl oz) low-fat milk

100g (3 ½ oz) low-fat plain yoghurt

1 tsp ground cinnamon

1 banana

40g (1 ½ oz) pecans

Method:

1. Place the oats, milk, yoghurt and cinnamon in a bowl and mix until well combined.

2. Pour the oat mixture into a bowl or jar. Cover with plastic film and place in the refrigerator to chill overnight.

3. To serve, top the overnight oats with sliced banana and pecans. Enjoy!

This easy breakfast will be ready when you are

This recipe is simple to adapt if you are following a non-dairy or vegan diet — simply substitute the milk and yoghurt for the same quantity of plant-based varieties.

If you want to add some plant-based protein, you could try adding a tablespoon of chia seeds to the oat mixture before chilling.

For best results, make sure you use rolled oats rather than steel-cut or instant oats, as they make for a better, creamier texture.
