Banana Cashew + Cacao Nib Protein Pancakes (Vegan + Gluten-Free)

Feeding your body the right nutrients pre or post workout is essential, as I mentioned in my previous post (The Importance of Pre and Post-Workout Meals.) Who said pancakes have to be unhealthy? Pancakes can actually be the best breakfast if you choose the right, healthy ingredients. I’m a huge fan of pancakes and have been since I discovered you can make them with oats. I feel like I spent all these years missing out! Could’ve been eating pancakes all the time a long time ago. Honestly, I wasn’t really a sweets person until last year, I would never eat anything sweet or crave it, so weird how everything changes with time. Now if I could eat pancakes all day, I would… no joke.

 

There’s a fine line between oat pancakes being healthy or not, first, use the right amount of oats or they will have too many carbs and two, don’t go overboard with the syrup. I tend to use sugar free maple syrup because it obviously has less calories and I don’t want the extra sugar. Even with sugar-free syrup, I only use 1 to 2 tablespoons of it. Just because it’s sugar-free doesn’t mean it’s completely healthy.

 

Eating these before your workout gives you the extra boost you need containing the 3 macros. An amazing combination of healthy fats, carbs and protein. Oats are an amazing carb to eat for breakfast because of the carb content and fiber content, we need these in the morning to be fueled up all day. Plus they keep you fuller for longer so you’ll be eating less food. These pancakes are a combination of various things but what gives them the extra touch are the cashews. Cashews are a great, vegan way to add creaminess to food instead of using cheese. I’ve made cheesecakes, pasta, pizza, using cashews… such an amazing flavor! Definitely try using them as a substitute, I highly recommend it.

 

These pancakes are high in protein because I not only added egg whites but also protein powder… for this you can add your protein of choice, since these were vegan I added pea protein. And to finish them with an extra superfood touch, I added some Maca for energy and some cacao nibs.  Maca gives you vitality which is perfect as a pre-workout. I tend to add maca to all my pre-workout meals or snacks instead of drinking a pre-workout, it’s a more natural way to fuel your body and improve your mood.  Cacao nibs are high in antioxidants, fiber, magnesium and also improve your mood. If you can add a superfood to any of your meals, DO IT! They are so good for your health and definitely make you feel more energized and happier throughout your day.

INGREDIENTS

1 cup gluten-free oats

¼ cup raw cashews

1 cup almond milk

1/2 tsp maca

½ tsp cinnamon powder

½ scoop pea protein

2 egg whites

½ banana

1 tbsp Cacao nibs

1 tsp coconut oil

 

TOPPINGS (OPTIONAL)

Banana

Blackberries

Peanut-butter

 

INSTRUCTIONS

  1. In a blender, add oats, cashews, almond milk, maca, cinnamon, protein, egg whites, banana, and cacao nibs.
  2. In a sauce pan, pour mixture to make small pancakes. Place on a plate, then add toppings of choice.
  3. ENJOY =)
