Easy Hearty Vegetable Soup
Winter is still here, and with that a lot of people are getting sick, or simply feeling run down. Sometimes what we need is to rest and have our Mum’s favorite veggie soup. But if you are like me, and your Mum isn’t close by, then this easy and hearty vegetable soup is for you.
You will need minimal ingredients, and as it takes less than 40 minutes this recipe pretty much cooks itself! You can add more veggies, or any other pasta, or quinoa if you prefer. So many options! It is also perfect to meal prep for the week, or freeze to eat whenever you feel like a soup.

HEARTY VEGETABLE SOUP
Ingredients (serves 4):
3 large long carrots, sliced (you will need 1 1/2 cups sliced, 170 g)
4 large long celery stalks (you will need 1 1/2 cups sliced, 200 g)
1 packed cup finely diced yellow onion (160 g)
3 x-large garlic cloves, minced (about a tablespoon,15 g)
3 small russet potatoes, cut into 1/2 inch cubes (you will need 2 1/2 cups, 370 g)
1 cup of spinach (optional)
6 cups water
2 tablespoons of vegetable stock seasoning (SEE NOTE BELOW on alternate version!)
1 teaspoon dried thyme
2 tablespoons nutritional yeast
1 cup gluten-free brown rice elbow noodles (170 g)
*Note: If you don’t have powdered vegetable stock then replace with liquid vegetable stock. Make sure to adjust your liquid measurements to; 4 cups of water, instead of 6, and 2 cups of veggie stock. Add some more spices, like Italian herbs or oregano for that extra flavor.
1. Prepare all of your veggies and set aside.
2. Add all of the water to a large pot and bring to a boil, add the veggie stock powder (or all the spices listed under "NOTE" and whisk to dissolve. Immediately add all of the veggies, thyme and nutritional yeast. You are adding all of the ingredients except the pasta. Stir well and bring back to a boil. Once boiling, immediately turn to the lowest heat, cover and simmer for 10-15 minutes or until the carrots and potatoes become tender.
3. Add the pasta and bring back to a boil. Once boiling, leave the lid off and turn the heat to medium-high and cook for about 10-15 minutes, or until the pasta begins to soften. Turn off the heat. Garnish with fresh chopped parsley and black pepper, if desired.
And that’s it! Super easy and soooo yummy! Perfect for a cold day inside, when you are feeling sick or run down, or if you need some extra greens or veggies in your day. I also love adding chili flakes! It will make it spicy and sooooo good!
